The RSC Glasgow and West of Scotland local section is joining the Glasgow 新月直播app下载 Festival 2026 (GSF26) and contributing a set of tabletop demonstrations. Through this outreach engagement, we hope to promote to the general public that chemistry is an ubiquitous way to understanding all things around us and to create key technologies for a sustainable future. 聽

Through two mini activities, participants will be introduced to the sequence nature of biopolymers that dictate their function, including the existence of proteins (enzymes) that yeast use to digest food and produce CO2 to give the pockets that make cake flugy, and the existence of additional proteins (gluten) that 鈥渓ock鈥 long polysaccharides chains (starch) in place to hold up these pockets.

The mini activities are firstly, a chemical facsimile of CO2 production by mixing acidic lemon juice together with basic baking soda sodium bicarbonate. Dripping lemon juice into baking soda put at the bottom of plastic test tubes will 聽spontaneously release CO2 gas bubbles that 鈥渆xplode鈥 up the test tube. Premixing some pH indicator color solution with the baking soda will add a color change when lemon juice is added and the bubbles are generated.

Secondly, participants are introduced to amino acid sequencing by making their own plastic bead bracelets. They can spell their own names but laminated informational sheets will also be provided that show common sequences for proteins used in cake and baking (e.g., gluten, milk and egg proteins).
