What are your favourite foods? Did you grow up on Angel Delight, instant mash, prawn cocktail, chicken Kyiv and Arctic rolls? The 1970s were once dismissively labelled 鈥渢he decade that good food forgot鈥, yet in hindsight they may have marked something far more significant: the moment when profit, price, taste and convenience collided at scale, accelerating our fascination with the modern food industry and prompting deeper questions about how food affects our bodies, societies and planet. Our favourite foods did not appear overnight; they are the products of millennia of adaptation, innovation and changing priorities.

Industrialisation transformed food production, enabling unprecedented population growth but also introducing profound challenges. Industrialised agriculture, mass food manufacturing and global supply chains delivered affordability and variety, yet at an environmental cost.

Exploring how to reshape the future of food combined with emerging technologies - particularly artificial intelligence, the conference tackles the questions consumers ask every day. Are plant-based alternatives really healthier? What opportunities are there for the use of AI in the food sector? How can we improve the lives of people with hypersensitivity to foods? With food information often contradictory and confusing, the speakers examine the science behind popular beliefs, challenge assumptions, and separate evidence from myth.

Grounded firmly in scientific research, the conference presents balanced, fact-checked discussions of modern food choices. It is for anyone curious about what really goes on behind their favourite foods, concerned about sustainability, intrigued by AI in the food industry or simply eager to make more informed decisions in an increasingly complex food landscape.

Food has always mattered. Today, it matters more than ever.
